I don’t know of any books on canning on a wood stove. Part of the trick is to get the temp right by fiddling with it a few times. Adjusting the draft and moving the canner to a spot on the stove not as hot if it getting too hot and visa versa. I know you are not supposed to move a canner when it is going…….that’s probably why you won’t find it in a book. I saw Mistyshooter223 do it and it gave me the courage to try it.

I have a question about using a pressure canner on a woodstove… How do you adjust the heat to regulate the pressure? I have not been able to find any info on this subject on the net. Can you recommend a book about pressure canning on a wood cookstove?

You are right. I think in part 3 I mention that I didn’t wipe the rims because the hotdogs and jars were both dry but so nothing got on the rims but it’s still good practice.
